That's a great question! You'll want to change the "Music Media folder location" located in the Music Settings. To do that open the Music app, then choose the Music menu > Settings > Files. From here you'll see the "Change..." to change the location of the folder. Here's more information, just in case:

What version of iTunes/macOS are you running? If the library already exists on the external drive you may simply need to hold down option as you launch iTunes, then select the appropriate .itl file on the drive, or a .musiclibrary package if you are running macOS 10.15 Catalina or later.
