Stolen iPhone and iCloud

My iPhone was stolen but I won't be able to get a new phone for around a week. I already placed it into lost mode but I am unsure if I should erase it completely, will that erase my iCloud backup for when I get a new phone? Will I still be able to retrieve my photos and contacts when my new phone arrives?

Erasing With Find My:

It is not going to erase your iCloud backup. It will only erase the iPhone. As long as items were enable in iCloud Settings, and all should be accessible once you reenable it. Go here to see if they are visible in iCloud Photos: https://www.icloud.com/photos

Troubleshooting a Lost or Stolen iPhone:

I. Use Find My: Use the Find My App to Locate a Missing Device or Item - Apple Support

If Find My was enabled with this, then you may be able to locate it there. Note that this is based off of the last time the device they were connected to was itself connected to the internet.

II. Secure your Info:

If concerned for device access, then (A)verify your devices, and (B)secure your account:

A. Verify your Devices:

Verify that all devices are logged in to your account, by using this link: Check your Apple ID Device List to See where you're Signed in - Apple Support

then...

B. Modify your Credentials:

Having been stollen, someone lily has your credentials. So, by all means, modifying them.
