The Apple ID is signed in the iPhone , you can configure the gmail account by adding the gmail address say example1@gmail.com see the complete steps in the article Add an email account to your iPhone, iPad, or iPod touch - Apple Support

Note : the gmail account should exist on server having all correct credentials in your records see if there are any issues with account with appropriate articles https://support.google.com/accounts/?hl=en#topic=3382296

Are you trying make this your Apple ID? If so, go here: Change your Apple ID - Apple Support

IMPORTANT: Consider sing a computer to perform this, as it would be more user friendly doing so.
