I received the moisture warning message when first connecting an iPhone 12 Pro to a Mac mini using a 3-meter Lightning-to-USB-A cable from a third-party supplier. Neither the cable nor the phone has ever been exposed to moisture.
The same cable always works successfully both connecting and sync-ing other older Apple devices (iPad Air 2, iPad Pro 10.5", iPhone SE 2020).
When I reconnected the same iPhone 12 Pro to the same Mac mini with a (1 meter) genuine Apple Lightning-to-USB-A cable, the warning never appeared again.

This appears to a hardware issue related to water/moisture detection. It cannot be solved here. I recommend that you have your iPhone examined at the Apple Store or at an Authorized Service Center for further diagnosis and a resolution.
