So when I woke up this morning my phone’s security lock was turned on and told me to wait 7 hours. This was weird because no one was in my room other than me and my phone was in the same position I had left it the night before and I hadn’t moved all night either. I asked my parents but they didn’t know and were confused as well. Why could this have happened then?

This will happen if the code is entered incorrectly too many times.
The more times you try, the longer the waiting time. So either someone tried to open your iPhone while you were sleeping, or you tried to unlock your iPhone while you were sleeping. It doesn't happen automatically, and your iPhone isn't hacked either.
If you can remember the code, you must wait until you have access to enter it again.
