Having issues updating my Microsofts word, etc due to error showing I need Big Sur 11 or higher, however I Can't update to macOS Big Sur 11 system is stuck on Catalina 10.15.7

Presently, Microsoft only supports the current Microsoft 365, or Office 2019/2021 for Mac as new installations on macOS Big Sur, or later. Office 2008/2011 for Mac are incompatible with Catalina's 64-bit application requirement.
If your particular Mac (per FoxFifth's post) really cannot upgrade beyond Catalina, then you are faced with using a Microsoft Office clone that would still be compatible with your existing Office documents.
