Open Settings ➡️ Messages ➡️ Send & Receive: Ensure that ONLY ONE Phone number is checked and that is the phone number of your iPhone. No email accounts should be checked. On the same screen, select start new messages from and choose the number of your iPhone.

The last thing that you will need to do is open the Messages app and then delete all Messages and start sending messages with a fresh start. If you continue to use existing message threads then the other person will continue to see the email address.
