If what TheLittles said is true, (that you meant how to update an iPhone 6s,) then you can update until iOS 15.7.3, which, according to Carol B., means you should be able to use YouTube.

Your iPhone is only capable of iOS 10.3. Its hardware cannot be updated any higher. YouTube requires iOS 14.0. In order for you to access YouTube, you will need a newer iPhone.
