No Audio with AirPods in GarageBand on iPad

I am facing a very weird issue. Yesterday I decided to download GarageBand on my iPad Pro 11" 3rd Gen. for the first time because I wanted to play around with a stupid song I had in my mind. Turns out: I have no audio via my AirPods Pro 1st Gen. I am playing around with the piano, there is a green amplitude in GarageBand, the audio level is set to max, but nothing. I even tried to record something and then play it back, but also that does not work. Then I navigated to the SOUND LIBRARY, to check, if the AirPods play the sound of the Audio Loops. And YES, they do! In full volume without a warning and I can not adjust the volume at all. It is just full volume by default. Even when I pull the system volume down completely, the AirPods are screaming like crazy. It almost blew my eardrum.
So, because my girlfriend was lying next to me sleeping, I did not try the audio without headphones. But now, I did, and it works perfectly fine. And now the most confusing thing. I tried some different bluetooth headphones from Sony and: they work. BUT - I can not adjust the volume. While I actually can adjust the volume level, It does nothing to the actual volume. It is just set to some value. The only volume I actually can change is the volume of the separate channels, and that even works. And then I figured out, that the same happens without headphones. The iPad seems to be set to a certain volume in GarageBand and I can not adjust it, even though I am adjusting the volume control.
After all that confusion, I thought it might be an iOS issue, so I installed GarageBand on my iPhone 14 Pro and - no issues at all. Everything works as expected. I can even adjust the volume via the system volume levers as you would expect it. Everything works perfectly fine! So I restarted my iPad a couple of times and even reinstalled GarageBand but nothing helps. The issue remains and it drives me crazy.
