After setting up a few automation scenes in MyHome App I was introduced to Shortcuts so I enabled a few. But why does Siri now show notifications that I should text someone a message after I just texted them, or that I should call someone after I just called them?

Thanks for using Apple Support Communities. It sounds like you're referring Siri Suggestions. As Siri learns your routine, you'll get suggestions of what Siri thinks you may want to do in that moment. You can read more about that here: Siri Suggestions on iPhone - Apple Support
If you would like to disabled Siri Suggestions you can do so as well:
1. Go to Settings> Siri & Search, scroll down, then select an app.
2. Turn settings on or off.

Correct I'm referring to Siri Suggestions and I prefer to leave it enabled. But Siri is suggesting past events.
Example:
When I iMessage Alex "What are you doing today?"
Siri Suggestions: You should send Alex a message saying "What are you doing today?"
