Money transfer to device card number on Apple pay
If someone sends money using Apple Pay with the unique device number that is displayed in settings under my monzo card. Would that get sent straight to my monzo account?

Apple Pay cannot be used to send money at all. Apple Pay is used to make payments in stores or in websites that support Apple Pay.
You would need to ask the person sending money, what they did exactly to send it. If the used Messages, it would be received by your Apple Cash account, but your device account number is not used for that.
