iPhone how to see the email header before I open a potentially dangerous email
I don't know, and AFAIK that info is not available using the iOS interface. If I feel the urge to investigate that data, I use the the Mail App on my computer, or the Website offered by my email provider. IMHO, if I have serious doubts about the veracity of an email, I avoid opening it.

The raw SMTP header information is not available on iOS with the Apple mail client.
You will need a different mail client.
Go to Settings>Mail>Message List>Preview>...select "5 Lines"
You can also use Settings>Mail>Messages>Privacy Protection>...and select "Protect Mail Activity"
