I changed a setting and now my Name and Apple ID at the top in Setting are greyed out. How do I change this back?

This is most of the times due to screen time restrictions
Please GO. To settings>Screen time>content and privacy restrictions, and turn those off. You can also try to turn off screen time completely and see if you can access your Apple id settings then
