How do you get "elevation gain" to display on an Apple Watch?

How do you get "elevation gain" to display on an Apple watch during an Outdoor Cycling workout. My watch has a title, "elev gained" on the workout face but no numbers ever show up.

Apple Watch Series 3 or later has a built-in altimeter to track elevation during a cycling workout. For Apple Watch Series 2 or earlier, bring your iPhone along to track your elevation. According to your tag you have a Series 8 watch which should track this metric. If so, the first (and simplest) thing to try if something isn’t working right is to restart your Apple Watch and its paired iPhone. If necessary (device not responding), try a forced restart. If that doesn't help, the next steps would be to unpair and pair your watch again and restore from the backup just created. This should result in no loss of data. It deletes all temp and corrupted files and re-indexes the file system.
