This may be caused by a few settngs on your iPhone. It could be Night Shift or True Tone.
Night Shift automatically adjusts the colors of your display to the warmer end of the spectrum, making the display easier on your eyes. Also, "True Tone automatically adapts the color and intensity of the display to match the light in your environment."
