I believe TheLittles has the visibility reversed. The lawful owner would be able to see the location of the stolen AirPods. The thief would see warnings when trying to pair with their iPhone. I just tried setting up my AirPods Pro with my work iPhone (different Apple ID) and there is are multiple warnings for not my device, then finally
a warning the AirPods belong to someone with a different (concealed) Apple ID. So in simple terms a thief can't see anything sensitive but you as the legitimate owner might be able to locate the thief.
I also believe you should keep the stolen AirPods marked as lost and locked on your Apple ID. DO NOT remove the stolen item from your Apple ID, because this releases it and enables the thief to take full control and ownership to their dishonest Apple ID.

If you are concerned for information and data breaches, then secure your account, starting with a new password. I recommend you change the password once every two or three months. Someone may have your credentials every-so-often —you never know.

A. Re-Associate All Devices:
Disassociate all devices from your Apple Account, first. Sign out of iCloud on all of your devices. Go here to check the devices associated to your account: Check your Apple ID Device list to See where you're Signed in - Apple Support. Then, log in to your Apple iCloud Account on each device.
B. Verify Your Devices:

C. Consider Modifying your Credentials:
By all means, consider modifying your credentials, starting with a new password.
D. Change the Password and Passcode:

Getting Location form AirPods:
If these were synced to your Apple Account, then they would see the location of your device. AirPods are not assigned their own IP Address. So, remove these from your account, if lost, as it would be a privacy issue.

To Clarify:
Seeing “address” it seems they are talking about a “Mailing address”. But, that would only be a concern if someone else already has access to their info.
None of this has anything to do with stolen AirPods. I won’t go over it step by step, but everything in your post is just wrong.
