Really want to update my iPhone 7plus to the iOS 16 but it won’t let me seeing as my phone isn’t new enough for it, it there any way I can download it other than purchasing a new phone? Thanks.

That is a great question I have had myself. In this case the software has features and services that just wont work and may cause hardware damage if implemented on your device. It may even render it useless if an attempt to update were allowed. Some hardware just isn't able to load or run with the newer software.
It would be like trying to put a Tesla electric engine in a old fashioned tractor. It may fit but the battery on your tractor was not intended to power the beast of an electrical motor like that.
