I have changed all of the DNS info on godaddy, but iCloud is not recognizing the domain. It keeps telling me to fix the MX records, but I have already done this.
The other thing is that godaddy doesn't have a SPF record. There are two TEXT records that I changed accordingly, but there was not a SPF specifically. Could this be the culprit?

Have you been able to verify that your domain appears in iCloud+? iCloud.com
If the issue persists, you need to make sure your DNS is setup correctly.
