When I tried activating the new US iphone 14 in Dubai, and logged in using my apple ID, instead of my own number the profile says some USA number saying Siri found in settings. Does this mean my phone is not original or new?

This means the iPhone has an Activation Lock.

If you are not the owner and do not have the Apple ID and Password then there is no way that you can get into this iPhone unless the original owner shares the Apple ID and password with you. If you are lucky you can get into this iPhone if they (owner) accidentally remove the device from their Apple ID.
Where, exactly, did you buy it?
If you purchased it from a retailer other than Apple, it can only be activated on a US carrier. Retailers like Best Buy and Target do not sell unlocked iphones.
