How to edit contacts details on iPhone?
How can I create unique contact field names?

The answer depends completely on the type of field name.
For example, if you would like “Maiden Name”, that would be done using “Add Field” toward the bottom when editing the contact.
On the other hand, if you would like to enter a spouse’s mobile telephone number, that is done by going to the Phone section, tapping in the Label area and choosing “Add Custom Label”.
