every time I click the lock button, it brings me to my Lock Screen with low brightness. How do I change the settings to fully lock my screen so it turns black.

This is a feature of the iPhone 14 Pro that uses low energy (battery) to keep your screen dimly lit so that you can see the clock and other important notifications. You have asked to turn this feature OFF and that is done by opening Settings ➡️ Display & Brightness ➡️ Always On Display: Set this switch to OFF.

The iPhone 14 series has an always on screen; the lock screen stays on when you lock the phone, and you can add widgets to it such as Weather, Activity, and other apps. If you don’t like this feature go to Settings/Display & Brightness and turn off Always On Display.

Not significantly. That’s why the screen dims, to save energy.
