Hello, can I default to wifi calling, I will be in Canada for 5 months and TMobile will charge me $0.25/min for calls made in Canada, so I would like to use the wifi calling option instead. I do have it turned on.

I am not clear if that achieves what you wish which is avoid having to use T-mobile services. Read Make a call with Wi-Fi Calling - Apple Support
It talks about everything in conjunction with a carrier, but you do not want to use your carrier.
I would see if there are any short-term plans you can get inside of Canada. Kind of the equivalent to Tracfone in the USA. Either that, or just turn off your carrier service entirely and just rely upon features such as Facetime to call people.
That isn't convenient to turn it off. I just switched from Vz to TM, but I may go back to Vz, they have a N American plan that I didn't need to worry about any calls in Canada, US or Mx. Unfortunately TM was cagy in answering my questions... and I didn't get that in this new plan. My biggest issue was Vz wasn't working in my 'home' area so I had no connection, I have my house for sale and needed phone service. So I believe the house is sold and I won't be in this area again, so may just bounce back to Vz! I also read that the party you are calling also needs to be in WiFi calling, well then I may as well use an App (Whatsapp), but my 88 year old father doesn't have a cell phone, only a land line! And many businesses you need to call as well... Thx for your inpute

No, that is not true. You can call anyone including land line phones.
