I don't know what you are swiping up but...

When you swipe workout left to right and tap the red X on the workout to end it, you can scroll down the resulting page with the crown to see distance, time etc, before you finally tap the green DONE. You will not see Steps as that is not part of the workout and never has been; Steps are calculated afterwards.

You can also look at Activity app and see Rings, Steps and distance (after a few moments) and also in the Fitness app on your iPhone, the day's summary so far includong steps.

Which workout did you use to record the walk? Did it show the distance, heart rate and elapsed time while it was running?
