Contact your carrier for assistance with the available short codes (Unstructured Supplementary Service Data codes) here, or with the included SIM applications, or with whatever is arising here with every call that stops your communications.

Contact your carrier. Express your concerns to them.

SIM applications and USSD codes (short codes) are established by your carrier, for use with your carrier.

There is no means to change or disable these codes, other than convincing your carriers about whatever issue or concern you might have (and you've not yet elaborated on your concerns), or by switching to a different carrier that doesn't have the particular function(s) of concern.

The folks at Apple are exceedingly unlikely to override carrier-implemented USSD codes—Apple uses some of those same codes within iOS, for some carrier-related functions including for call-forwarding—and Apple is exceedingly unlikely to disable or block carrier SIM applications.

Try looking under settings, cellular, SIM applications, contact your carrier to see what options you need to change.

note that some carriers do not have any Sim applications whatsoever, if you don’t see Sim applications in your cellular data settings, then your carrier does not offer Sim application settings for users to customize.

if you have multiple eSIM/physical Sim lines, select the line that is having the problem and check whether if there are any SIM applications and if there’s any settings that need to be changed.

sim applications typically use USSD/MMI codes to run, and generally there are applications which is stored on the Sim.

in most North American countries, there are no customizable Sim applications, and USSD codes are customized through the phone app.

there are also some Sims from carriers that have actual Sim card applications, which uses either MMI/USSD or SMS/text baste commands.

for your situation of Sim applications, running after a call ends, it could either be SIM applications, or it may be a flash SMS. Flash SMS is a text message that arrives with the message being popped up on the entire screen and it is not stored on the device, it will be gone when you hit the dismiss button, but there is no way to turn off flash SMS messages on iPhone
