Use your Trusty Time Machine Backup to Restore the missing Folder and there for the Item within the folders

When I go into the Time Machine, the dates appear as bars on the right-hand side of my screen, but when I click on, say, 20 January 2020 it doesn't go to the Time Machine display for that date.

Have you recently update the OS? If so it may not let you go back after that date normally. You can try shift-command-c which may let you go back into the the TM folders.
