I have my keyboard set to American English and it still uses the words "colour" and "humour" like Apple is trying to force this horrible archaic spelling that we took centuries to improve. How can we fix this?

Make sure in your Dictionaries setting you have only American English versions active.
Is US English the only item on your list in settings > general > keyboard > keyboards? Also in settings > general > language and region > preferred languages?

I have US and then a couple entries down is Canada. Will deleting that help? Does everyone have this?

Not clear where you are talking about, but removing Canada can't hurt.
