Is it normal for the blood oxygen contradiction to show only a circular icon and not the actual measurement (%)?

Yes, that is normal. By adding Blood Oxygen to a compilation, you are adding a shortcut to the app, not a reading. Tap that circular icon then tap Start for a reading.
