I want to buy a new iPhone but I travel to Greece a lot and I want to know if all the iPhone models are unlocked so I can use them in Greece too

If you buy them directly from Apple, they will be unlocked.

Note that if you buy an iPhone 14 from the US. It will not work with a physical SIM so make sure your carrier in Greese can offer service with an eSIM.
