As far as I know, if you are in Finder Column view (⌘+3), you can press cmd+↑ to walk back one enclosing folder for each shortcut invocation, but there is no magic collapse all shortcut.
If you have the View menu > Show Path Bar enabled, you can click on the principal containing folder in that Path hierarchy that appears at the bottom of the Finder window and that will close all subordinate folders to the one you clicked.
By example, lets say I have this Path shown at the bottom of a column view Finder window:
If I click on py_projects, it remains in the Path Bar and columns will collapse to one containing any main folders in that py_projects folder.
