If you have an email address that you used with another Apple device then you it in order to get all the information from your other Apple device or Mac. See below. If you don’t have any of those devices and it doesn’t have to be your most recent phone device but if not you can use an email address that you want the information sent to your new IPhone or you can create an email address with @icloud or mine is an Apple account ending in @me.com or you can even transfer an email address from other device with emails like windows but you may have to create an Apple email during set up. Try another one you have or had but change the address with an @icloud or can use that and it will transfer everything over from your previous Apple device if it’s an IPhone or an IPad or Mac, or to start using your FIRST IPHONE!! You will find it very user friendly and easy to get around.
*** NOTE - Instead of a back button to switch between or close apps you need to swipe up and touch the main screen or swipe up quickly the majority of the way to close an app. In IOS you can open multiple pages and save them to read later or as a favorite if you prefer but to close the page/s scroll up or down a little until you see the little box and another box with an arrow pointing up to forward to your notes or printer or in a text or email or an message app for social media platforms you have signed into or at the top when you see the open page/s after tapping the square on the lower right side at the bottom of the page you can click the x at the top opposite of the page and click it to exit the page/s.
