You're talking about the Quote level lines. They are removed with the key combination of ⌥+⌘+' and it doesn't have to be done one line at a time. You can select the entire message body and remove the quote level at one time.

well I was trying to answer the question where the answers were all to copy and paste the item to remove the vertical lines, Command, option ' takes away one line at a time, very easy to do, just a few clicks and you're done. Copying. and pasting is, to me, cumbersome by comparison. This command has been available on the Mac for years and years.
Open Keyboard Viewer, has it switched KBs?
