Start Page Numbering on Page 2 of a Pages Document

What is the best way to insert the page number (e.g., Page 2 or 3) and have the page numbering begin on Page 2 and not on Page 1?

You can click on the first page, insert the page number and then select Documents > Section > Hide on first page of section. This will hide the header/footer only on the first page and on the next page, the page number will be 2.
