We’d be happy to help out. Thanks for using Apple Support Communities. If you’d like to download data from iCloud and store it on an external SSD, you can do so by downloading the data to your PC with the steps here: Archive or make copies of the information you store in iCloud - Apple Support
Within the above resource you’ll find steps for to download each type of data you’re looking for.
Once downloaded to your PC, just move the files to your SSD.
