I bought a normal iPhone 12 in January at the Apple store and I still have all the documents, I bought it for 743$ and I want to exchange with 14 normal, do Apple accept exchange? And I'll add how much!?

In almost every country, Apple's exchange policy is 14 days. So, no, they won't accept an exchange. You can try selling the phone privately and using the money to buy a new one or avail yourself of Apple's trade in program.
You could also take it to the Apple Store where you live and have it evaluated.
You can go online to order the IPhone 14 and select “trade in” and Apple will tell you an approximate of how much money you will get back for trading in your iPhone.
