How to make Mail include date, email addresses, subject, etc. in Replies?

When you reply to an email in Outlook, the date, To/From email addresses, and subject line are included, which is critical in our industry because we need to keep a record of who sent what, to who, and when. I can’t use Apple Mail because it only shows:

I love using Apple mail and want to make it my main app; but I need that record. How can I switch it to the detailed version, like Outlook and other mail applications have? For example, Outlook records this with each reply/forward:

I can’t find the answer anywhere, which is bizarre because I would think this is basic, and the main thing Apple would have on their email app. Please let me know how I can add this??
