Numbers does not currently feature vertical text in table cells. Vertical text would be handy when column headings are long and won't fit into narrow columns.

Text boxes, rotated 90°, are one solution. However, the text boxes "float" in front of the table and are not part of the table. If the table is moved, the text boxes do not follow.

One solution is to paste images (screen shots) of the 90° text into table cells where the text becomes "fixed" as Image Fills. This requires some careful work to size the screen shots and cells so that the images do not become distorted when pasted. Very fiddly, but done once and saved as template, becomes easier. See:

Sadly, you can't.

But you can put text in text boxes, rotate them and place them over cells.

Ian (Yellowbox) has a nifty user tip for that. Perhaps he'll stop by to post a link.
