You may be able to locate the phone number by tapping on the conversation thread, and then tapping Info underneath the person's name and profile icon.

Since the contact name and phone number is saved on the device, you can also see the contact's phone number under their contact name in the Contacts app. For more information about finding a contact in the Contact's app, review this article: Add and use contact information on iPhone.
