Ive been being charged for subscriptions to Apple TV and Dropbox, but didn’t want either nor did I realize I was being charged for these monthly. How can I get a full refund for both unwanted subscriptions? How do I ensure that it doesn’t happen again? And how do I update my password if the phone number on file is no longer my number so I cannot access it?

Many free trials would transition over to a paid subscription after the trial, if not canceled on time. Could that have happened?

Trusted phone numbers apply when you do not have an Apple device with that Apple ID account. Else the verification codes are send to you trusted Apple devices as OS notification online, not using phone numbers.
You may edit trusted phone numbers on the Apple ID site, and that will likely invoke TFA: Manage your Apple ID - Apple.
