I understand what the designers intended to do, but for me, this function is like an unexpected flash bulb in your eyes. It interrupts my flow, throws me off, frustrates me, and gets in my way.
Surely Apple created some kind of control to opt out of it, right?

You can disable the corner-swipe gestures from iPad settings:
Settings > General > Gestures > [Corner Gestures] Allow Finger to Swipe From Corner - set to OFF
If you use an Apple Pencil, you may also wish the disable the equivalent gestures:

Go to settings and then Multitasking & Gestures (not General.). Either toggle off Swipe from Corner or change turn off the option you want off if you want the other one to stay (like if you want quick notes to remain then turn off screenshot)
If you don’t see it there either then it may be different if you are on a different version of iPadOS

The location of Pencil Gesture settings have changed for iPadOS 17.x - the previously described settings path being valid when the post was written for an earlier version of iPadOS in May 2023.
For iPadOS 17.x (as of May 2024) the equivalent swipe-gesture settings for your Pencil and Finger are accessed in two different locations in settings:
Settings > Apple Pencil > [Pencil Gestures]
Settings > Multitasking & Gestures >
