Under Options the 'Sync only checked songs and videos' is grayed out.
I am trying to delete songs from my daughter's ipod nano but can't figure out how to get started
All the directions I found indicate I need to select 'Sync only checked songs and videos' however that is grayed out so I can't select it.

For that option to apply, have you checked any songs to be synced first?
If you're not able to check songs due to a lack of checkboxes, see Change General preferences in iTunes on PC which offers:
"List view checkboxes
Display checkboxes when viewing items in your library in a list."
Enable that setting to view the checkboxes, select at least 1 song, and see if the setting you asked about can be enabled.
