Based on what you've told us, you're seeing quick actions for the Messages app. Perform quick actions on iPhone - Apple Support
For Messages, you may see a recent contact or someone you contact often. There isn't a way to disable or turn off quick actions. If you'd like to provide feedback or make a feature request, you can do that here: Product Feedback - Apple

There wouldn’t be a way to change what appears. It’s chosen based on prior activity. We’d suggest providing feedback using the link provided if that’s an option you’d like to see avaialble in the future though.

I don’t necessarily want to turn off the feature…I want to change the contacts that appear. Is there a way to do that?
Same issue as - "Whenever I apply slight pressure to my message icon a pop up comes up with “edit home screen, a name and then text”
