Previous answers were not helpful (manually changing on each slide). Here's what I learned.
Turns on Slide Number for all slides.
Select the slide number on a slide and change the font size, color, position, etc.
Click SAVE for the Slide Number style.
This will change the format of the slide number on all slides.

There is no save in Format Styles, the only option is; create a new Paragraph Style

When I edit the slide number of one particular slide, there is an option to save (actually, "update") the Slide Number style. Clicking that saves the style in that presentation and updates it on all other slides.
