Updating and No Internet Connection:
Just because you have a network connection does not mean you are connected to the Internet. You may be using internal network services. If you have Cellular enabled, then disable it and attempt and update using WiFi.
So, Update Using a Computer:
Rather than ridiculously waiting oh so long, power off your iPhone, and then attempt updating through use of a computer. Use my User Tip: Update your iPhone Using a Computer - User Tip
