On opening safari it always goes to google.co.za (South Africa). I did spend some time in S Africa quite a few years ago and believe the setting somehow was changed then. Since that time I always get a google search page which seems to com up with this setting and I seem to be unable to get it to change to google.co.uk. Any help would be appreciated.

If this page pops up as soon as you open Safari, check what your search engine is listed under in Settings > Safari > Search Engine. Also, confirm the country or region your iPad is set to under Settings > [your name] > Media & Purchases > View Account > Country/Region.
If those check out, it is probably an account setting in your Google account rather than your iPad or Apple settings. We'd recommend checking through your Google location and search settings to confirm if there's something on their end still giving results from South Africa.
