I saw this issue beeing discussed here since 2019, it's 2023 and I am on my iphone 14 pro max and it still happens.
to fix just restart iphone after wallpaper chance.
I don't understand why this is happening, the pictures just get desaturated ( i double checked with the photo library one and the differance is night and day)

If that doesn't seem to resolve what you are seeing, test a different photo to see if the same issue occurs. Also try a photo that is taken with your camera or downloaded from another source. Same exact problem. Wallpaper image is desaturated a bit after setting it. It's definitely an iOS issue, not device specific. No "photo style" was set for the image. And switching between light mode and dark mode did not affect the image at all.
After restarting my device, the new wallpaper image appeared with full saturation and looked as it should.
It’s cause you have to be in Dark Mode, Light Mode washes out your Home Screen.
