Can you password protect albums in photos app on MacOS

The only password protected albums in Photos are the Hidden album and the Recently Deleted album. You can change the Settings, so you need to enter your user password to unlock them.
If you need to protect other photos, I would use a second photos library in a separate user account, to keep private photos and work photos separate. Or keep very private photos in the Notes.app, where we can lock individual notes.

Adding to what léonie said: Password protection in Photos discourages people from looking in the Hidden album and at the Recently Deleted view when using Photos. But those picture files are still "findable" to someone who has access to your computer and who wants to work harder at hunting them down in the guts of the system. Be careful.
