Another option: I bought a Sabrent Thunderbolt 3 enclosure to use with an M1 Mini and installed an SSD myself. The enclosure is really solid and the drive can be installed without tools. Works great.

I would recommend the drive from OWC. their main focus is Mac compatible hardware.
