If your original AAC file is matched in Apple Music and you have lossless playback enabled then a streamed copy of the track should play from a lossless stream. You can locally convert .aac files to .wav format, but you just end up with a bigger file, no tag support, and no gain in quality, so there generally isn't any point to that.
