Hi! How exactly have they locked you out of iPhone? Did they change the passcode or did they link another Apple ID to the phone?
If it's a changed passcode, read through the steps in this article again: If you forgot your iPhone passcode - Apple Support
Contact Apple Support if the article doesn't help: https://getsupport.apple.com
If another Apple ID is linked to iPhone, only the previous owner (in this case, your employee) can erase it. They will need to follow these steps before giving you the phone back: What to do before you sell, give away, or trade in your iPhone or iPad - Apple Support
Hope this helps!

If you’re not using device management software, you’ll need the old employee to unlock the device.
