My Mac delete some apps without permission from me and this isn't the first time , I don't know why ?

What apps? Sometimes when an app gets updated, it puts the old one in the trash bin making it look like it was deleted but it's just the older version. Still interested in knowing which apps specifically got deleted?
Are you saying that without you doing anything, these specific apps are put in the trash?
The only way I can think of, if not in a context of updating, as Randall suggested, is if there is some script triggered by a launch agent or daemon. But why would such a thing happen is beyond me.
Anyway, if you like, run Etrecheck and post its full report here. Maybe we can spot something.

I don't see anything in the report that might account for this issue.
i'm disabled system int. protect from 1 months and enable that again may be for this reason do this problem.
